Light vs Medium vs Dark Roast: Which Should You Buy?
Roast level is a bigger flavor lever than origin for most home drinkers — and it's entirely about how long and how hot the beans were roasted, not a different type of bean.
It's one process, not three products
Every coffee bean starts as the same green, unroasted seed. "Light," "medium," and "dark" roast aren't different coffee varieties or processing methods — they're checkpoints in the same heat-and-time process, and the roaster decides when to stop. The industry uses a standardized way to describe how far a roast went: the Agtron scale, an infrared reflectance measurement of the roasted bean's surface, developed by the Specialty Coffee Association together with Agtron Inc. Higher Agtron numbers (roughly 80–100) mean lighter roasts; lower numbers (roughly 25–45) mean darker roasts. It measures color, not flavor or quality directly, but it's the closest thing the industry has to an objective yardstick instead of "trust the bag description."
Two physical events mark the major transitions during roasting, and they're audible — the bean actually cracks:
- First crack happens around 385–401°F (196–205°C), when built-up steam pressure inside the bean forces it to expand and audibly crack. Light roasts are stopped shortly after this point.
- Second crack happens around 435–450°F (224–232°C), when oils inside the bean start migrating to the surface. Dark roasts are pushed through or past this point; medium roasts land somewhere between the two cracks.
Before either crack, two other reactions are already shaping flavor: the Maillard reaction (browning from sugars reacting with amino acids) kicks in around 302°F/150°C, and caramelization — sugars breaking down and building sweetness — starts around 338°F/170°C. By the time a bean reaches first crack, it's already picked up meaningful color and flavor development from these two reactions alone.
What actually changes as roast gets darker
Acidity peaks early, then drops
A 2024 peer-reviewed study in Scientific Reports measured titratable acidity across seven different roast profiles and found something specific: acid level always peaked right around first crack — averaging about 4.9 mL NaOH per 40mL sample across all profiles tested — then declined back down to close to its starting level by second crack. The timing of that peak could be moved earlier or later depending on how fast the roast ran (as early as 8 minutes into a fast-start roast, or as late as 13 minutes on a slow-start roast), but the peak-then-decline pattern held regardless of method or bean origin. Chemically, the rise comes from formic and acetic acids forming from carbohydrates during roasting; the later decline comes from chlorogenic, citric, and malic acids breaking down into other acid compounds.
Practically: a light roast, stopped near first crack, is caught close to peak acidity — which is why light roasts taste brighter and more citrus- or fruit-forward. A dark roast, pushed well past second crack, has already lost most of that acidity, which is part of why dark roasts taste rounder and less sharp, not just "burnt."
Body and flavor character shift from origin-driven to roast-driven
Coffee Review's roast classification (an industry reference used across specialty coffee) lays out the progression by Agtron number:
- Light (Agtron 80+): light body, little to no surface oil, flavor still close to the green coffee's own character.
- Medium (Agtron 60–70): fuller body, balanced acidity, origin character still identifiable.
- Medium-dark (Agtron 50–60): oil starts appearing on the bean surface, chocolatey and roasty notes start layering over fruit character, acidity mutes.
- Dark (Agtron 40–50): visible oil, richly bittersweet and roasty flavor, acidity significantly muted.
- Very dark (Agtron 25–40): body actually thins again, bitterness dominates, and origin character disappears almost entirely.
The practical takeaway: if you're paying extra for a specific origin — a washed Ethiopian, a natural-process Colombian — a light or medium roast is what lets you actually taste the difference. Push the same beans to a dark roast and you're mostly tasting the roast itself, not the origin, which is why many dark-roast blends use lower-cost beans; the roast is doing the flavor work, not the bean.
Caffeine: the myth, and what's actually true
The common belief that dark roast has more caffeine (because it "tastes stronger") doesn't hold up. Roasting temperatures rarely exceed about 470°F, and caffeine is thermally stable enough that it doesn't degrade meaningfully at any standard roast level — so by weight, caffeine content is roughly the same across light, medium, and dark roast of the same origin coffee, with some sources noting light roast can be marginally higher by weight since less mass is lost to roasting.
Where it gets confusing is measuring by volume instead of weight. Dark roast beans lose more moisture and mass during roasting, making them larger and less dense — so a scoop of dark roast beans weighs less than the same scoop of light roast beans. If you're measuring coffee by scoop or spoon rather than by weight (most home brewers do), you'll actually get slightly more caffeine per cup from a light roast, not a dark one — the opposite of the popular assumption. If you weigh your grounds instead of scooping them, the roast-level difference in caffeine largely disappears.
Darker beans are visibly larger and glossier from surface oil — a result of moisture loss and second-crack oil migration, not a different bean.

So which should you buy?
There's no objectively "correct" roast — it's a genuine preference, not a quality tier. As a starting point:
- Choose light roast if you want to taste origin character, drink pour-over or a similar manual method that can resolve subtle acidity, or generally prefer tea-like brightness over heaviness.
- Choose medium roast if you want a balance that works across brew methods and don't want to think about it too hard — it's the safest default for drip coffee makers and most home setups.
- Choose dark roast if you like bold, low-acid, full-bodied coffee, drink a lot of milk-based drinks (dark roast tends to cut through milk better than light roast), or brew espresso, where many blends lean medium-dark to dark specifically for that reason.
